College of Health, Human Services, and Science

Dr. Erick Cervantes, who resides in Oceanside, CA, teaches classes in Health Education, Health and Wellness, and Complementary Alternative Health at Ashford University. Originally from Peru, his family migrated to Oregon, where Dr. Cervantes still enjoys going to whitewater raft, hike, camp, and ski. He earned his Bachelor of Science in General Science from Oregon State University (OSU). Besides his academic responsibilities he was also involved in advocating for an ethnic studies program at OSU. As a Master of Public Health candidate at Tulane University, he pursued practicum experiences working with street children in Tegucigalpa, Honduras; well-water projects in rural Pinar del Rio, Cuba; and as an assistant to a midwife in rural Senegal, West Africa. He also holds a Doctorate in Naturopathic Medicine from the National College of Natural Medicine in Portland, OR. “My interest in education stems from my philosophical belief that practical experience and theoretical knowledge are a powerful combination in the classroom setting.” Because Dr. Cervantes believes that everyone learns in diverse ways, he integrates different skills, formats of presentation, types of engagement, tasks and student-led learning. “My favorite thing about teaching at Ashford is that I don’t stop learning!” He advises students not to procrastinate, and to remember that exercising your brain is like exercising your body: “it takes time, effort, and constant repetition.”
